Chapters in this Episode

In this episode, Alejandro Saravia, owner and executive chef of Renascence Group, shares his approach to running a successful restaurant — from choosing the right site, to forecasting revenue, and using data to track performance and drive profitability.

Alejandro Saravia is the Peruvian-born chef and restaurateur behind The Renascence Group, which operates a growing portfolio of venues across Melbourne and Sydney, including the acclaimed farm-to-table restaurant, Farmer’s Daughters.

After beginning his culinary training at 16, and later completing a degree in Marketing & Business at the University of Lima, Alejandro built his career across some of Europe’s most esteemed kitchens, including Heston Blumenthal’s The Fat Duck. A move to Australia in 2006 revealed a gap in the market for Peruvian cuisine, and he’s been building and refining his offering here ever since.
