In this episode, Harry Kapoulas, co-owner of Homer Rogue Taverna in Cronulla, shares his advice on creating a restaurant fit-out that balances aesthetics, function, and longevity.

Harry Kapoulas is a Sydney-based restaurateur with a background in interior design and architectural drawing. After starting his career designing kitchens and bathrooms, Harry was drawn into hospitality by his brother, Mario.


Together, the pair opened Ham, a Cronulla institution that's still running 17 years later. Since then, they’ve gone on to launch several more venues, including a Japanese-inspired café, a rotisserie, and most recently: Homer Rogue Taverna — a 100-seat restaurant that honours their Greek heritage. Inspired by the taverna culture of Athens, Homer was years in the making, with Harry overseeing every detail of the venue’s interior and kitchen fit-out alongside AP Design House.
