Chapters in this Episode

In this episode, Adele Arkell, co-owner of Radio Mexico, shares what it takes to build a strong team — and a kitchen culture that makes people want to stay.

Adele Arkell, a Brisbane native by way of Barcelona, is one of the founding figures behind Melbourne’s world-renowned breakfast scene. After opening her first café in 2001, she went on to launch more than a dozen venues over the next 15 years, before a trip to New York sparked a deep appreciation for Mexican cuisine.

A fluent Spanish speaker, Adele immersed herself in the culture, spending three years refining her craft. In 2012, she opened Radio Mexico in St Kilda, now a local stalwart, known not just for its margaritas and pork belly al pastor, but for its people. More than half of the 30-person team have been there for five to ten years, with some working alongside Adele since before the doors first opened.
